ZITARUS. Organic extra virgin olive oil from northern Tunisia.
By the Mediterranean, the olive takes its time.
Then comes the drop.
Extra virgin: the fruit, and nothing but the fruit.
Ours has a name: ZITARUS.
A 100 ml bottle to give, to welcome, to host, to carry.
Northern gold, at your table.
Organic extra virgin olive oil from northern Tunisia, in a 100 ml bottle that travels with you like a perfume.
Start your order“Zit” is the Tunisian word for oil. “Zarytus” recalls Hippo Zarytus, the ancient name of Bizerte, gateway to northern Tunisia. ZITARUS joins the two: the oil of the North, where the olive is at its purest.
Northern Tunisia
Tunisia is the world’s second-largest exporter of olive oil. Yet 86% of it is shipped in bulk, to be blended and sold under other names. Its Tunisian origin is lost along the way.
We chose the opposite: an oil that says where it comes from. The North, its purity, and our name on every bottle.

Through laboratory analysis. An extra virgin oil must have an acidity of 0.8% or less and a peroxide value of 20 meq O2/kg or less. Ours sits between 0.2% and 0.5% acidity, under 12 meq O2/kg. Every figure is in our technical details.
Yes. Tunisia is the world’s second-largest olive oil exporter. Ours comes from the North, where the olive is at its purest, and it carries its own name and origin.
Yes, and it’s a good sign. The bitterness and pepper come from polyphenols, the olive’s natural antioxidants (250 to 350 mg/kg in ours). In a fresh oil they are qualities, not flaws.
The olives are pressed once, mechanically, below 27 °C. This gentle extraction keeps the oil’s aromas and polyphenols intact.
